Recipe Corner

If your grandkids like pizza, they’re sure to like this recipe for Pizza Pockets. Add a salad and some fruit, and you have a well-rounded meal.

Pizza Pockets
(8 servings)

Ingredients:

  • 1 can of large biscuits – 8 per can
  • Filling of your choice, such as diced, cooked ham, pepperoni, chopped vegetables, or mozzarella cheese
  • A small amount of pizza sauce or spaghetti sauce. You’ll use about one tablespoon of sauce on each biscuit

Directions:

  1. Heat oven to 400 degrees.
  2. Separate biscuits and press each to form a 5-inch circle.
  3. Place pressed biscuits on ungreased cookie sheet.
  4. Spread a tablespoon of sauce on half of each biscuit circle.
  5. Add a small amount of fillings.
  6. Fold the pizza circle in half, pressing the edges with a fork to seal.
  7. Bake at 400º for 12 to 15 minutes, or until golden.
